my mother calls them "huevos con papas" but "papas con huevos" just rolls

ingredients
potatoes
eggs
onion
tomato
garlic salt
vegetable oil
instructions
chop potatoes in small pieces.
coat pan in vegetable or olive oil and fry potatoes until golden-brown,
somewhat soft. add garlic salt in intervals throughout cooking process and
stir semi-regularly.
add chopped onion and tomato to pan.
when the potatoes are almost finished, crack ~3 eggs into pan and
scramble until fully cooked.
