chilaquiles recipe

  1. chop tortillas into medium-sized wedges. keep in mind that they'll curl up and shrink while frying so don't make them too small. (also see note about frying)
  2. coat pan with oil and set heat to medium-high. add tortilla wedges and salt liberally. fry until golden brown, stirring semi-frequently to prevent burning.
  3. add salsa slowly to tortillas, stirring until absorbed.
  4. lower heat to medium-ish. crack 4-5 eggs into pan and scramble until thoroughly cooked.

serve hot!

AND for the ultra-deluxe version crumble up some queso cotija or queso fresco over that thang...


note: these things take fucking forever to fry

if you're using fresh out of the fridge tortillas, frying them usually takes at least 30 minutes ime if not closer to an hour. what i've been doing instead is sticking the cut-up tortillas in the oven for a few minutes, not enough to actually cook them, just to dry them out a bit so they fry up faster.

i found this tip on another person's recipe for chilaquiles, highly recommend if you're very hungry or very lazy. whichever
